Creamy Spinach Chicken Meatballs 🍽️

Soft, juicy, cheesy, and packed with flavor — these creamy spinach chicken meatballs are comfort food perfection! Here’s how to make them 👇


🧾 Ingredients:

For the meatballs:

  • 500g (1 lb) ground chicken (or turkey)
  • 1 cup chopped fresh spinach (or thawed frozen spinach, squeezed dry)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 egg
  • Salt & pepper to taste
  • ½ tsp paprika (optional)

For the creamy sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups milk or heavy cream
  • ½ cup shredded mozzarella (plus extra for topping)
  • ¼ cup grated Parmesan
  • 1 clove garlic, minced
  • Salt & pepper to taste
  • Optional: pinch of nutmeg or chili flakes

👩‍🍳 Instructions:

  1. Preheat the oven to 200°C (400°F).
    Lightly grease a baking dish or line it with foil.
  2. Make the meatballs:
    In a large bowl, mix together ground chicken, spinach, onion, garlic, breadcrumbs, Parmesan, egg, salt, and pepper.
    Form into medium-sized balls and place them on the prepared baking dish.
  3. Bake:
    Bake for 18–20 minutes, or until slightly golden and cooked through.
  4. Prepare the creamy sauce:
    In a pan, melt butter over medium heat.
    Add minced garlic and sauté for 30 seconds.
    Whisk in flour and cook for 1 minute, then slowly add milk while whisking to avoid lumps.
    Once thickened, stir in Parmesan and mozzarella until smooth. Season with salt, pepper, and nutmeg.
  5. Combine & bake again:
    Pour the sauce over the baked meatballs. Sprinkle more mozzarella on top.
    Return to the oven and bake for another 10–15 minutes, until the top is golden and bubbly.
  6. Serve hot!
    Enjoy with mashed potatoes, pasta, or crusty bread — and watch everyone go back for seconds.

Pro tip:
For extra flavor, mix a spoon of cream cheese or a handful of chopped basil into the sauce before baking.
